As far as I know, there are two documentaries on Olmsted... PBS did one, which focused almost entirely on Central Park. And then there's this one, done about a decade ago, called "Olmsted & America's Urban Parks".

It's a pretty decent documentary, and discusses Olmsted's design theories and practices somewhat satisfyingly . The second half of the film, beginning with Prospect Park, has a lot to offer.
